Pulao reminds us of rice combinations flavored with different types of masalas, but this unique recipe with bread as a main ingredient combined with vegetables and paneer makes it a perfect, healthy snack for evenings.

  • 5 bread slices (cut into 1 inch pieces)
  • 2 boiled potatoes
  • ½ cup grated carrots
  • ½ cup finely chopped cabbage
  • 2 tomatoes
  • 2 tsp ghee
  • 10 g cashew nuts
  • 2 tsp grated cottage cheese (paneer)
  • Salt and red chilli powder as per taste
  • ½ tsp chat masala
  • Few mint leaves
  • ½ tsp coriander powder
  • ½ tsp garam masala powder
  • 3 tsp refined oil
  • Few chopped coriander leaves


Heat oil in a pan. Add cashew nuts and fry till light brown. Add cabbage, chopped mint leaves and fry for few minutes.

Add carrot and fry for 2 minutes. Stir in chopped tomatoes, boiled and diced potatoes, salt and mix well. Cover and cook for 3 minutes. Add grated paneer and mix well.

Stir in red chilli powder, garam masala, coriander powder, chat masala and bread slices.

Mix well and fry till all the masalas are coated to the bread slices. Add ghee on top. Garnish with chopped coriander, grated paneer and serve hot.
