Date pudding is a delicious dessert, which is highly nutritious. It is a quick recipe and can be relished after a scrumptious meal. Dates contain natural sugar and are rich in potassium that helps to lower blood pressure. This ‘Date pudding’ is an egg-less recipe and anyone can try it.

- 1 cup dates (finely chopped)
- ½ cup sugar
- 2 tbsp butter or vanaspati
- 1 cup thick milk
- ¾ tsp soda-bi-carbonate
- 1 cup flour
- ¾ tsp baking powder
- ½ tsp vanilla essence
Combine the first five ingredients and place on a low flame. Stir till the sugar is dissolved and the mixture just begins to boil. Remove from fire and allow complete cooling.
Add the essence and flour, sifted with baking powder. Mix well. Pour in a greased aluminum mould and cover the mould with a piece of aluminum foil or double layer of butter paper so that the steam and water cannot enter the mixture.
Pour 3 cups of water in a pressure pan and place an upturned cooking plate in it. When the water boils place the mould in it. Steam for about 30 minutes.
Cool the pudding for 10-15 minutes and turn out on a serving plate. Serve plain or with custard.
