Omelette roll is a nutritions snack and can also be had for breakfast. This quick and easy omelette roll can also be prepared with left-over paneer or vegetables of your choice.

Cook time: 5 min for each omelette
- 4 eggs
- ¼ cup onion chopped
- 1 small potato, boiled and peeled
- 2-3 green chillies chopped
- 1 tbsp coriander chopped
- ½ cup peanuts, roasted and ground
- 1 cup mashed cottage cheese (paneer)
- Salt to taste
- ¾ tbsp crushed black pepper
- 1 tbsp butter
- 1 tsp oil
Grate the boiled potato. Mix onion, green chillies, coriander, paneer, butter, peanuts, half the salt and black pepper with it and make two portions of the potato paste and roll out each portion.
Beat eggs vigorously for 3-4 minutes. Add salt. Heat half the oil in a frying pan. Pour half the beaten eggs and prepare a large omelette. Drizzle remaining oil. Remove on a tissue paper. Prepare another omelette the same way.
When cool, roll the omelette by placing paneer rolls on it. Top it with butter. Cut into portions and secure with toothpicks. Serve hot with sauce.
