This chicken fry recipe is an authentic dish from Goan cuisine. The procedure is completely different from other cuisines. Goan cuisine is influenced by the religions of Christianity and Hinduism. This dish is prepared during feasts and food festivals in Goa.

  • 1 kg chicken
  • 8-10 red chillies
  • 1 tsp cumin
  • ½ tsp peppercorns
  • 4 cloves
  • 4 cm ginger
  • 1 small garlic pod
  • 1 tsp mustard
  • 1 tsp turmeric powder
  • 1 tsp vinegar
  • 4 medium size tomatoes
  • Salt to taste
  • 5 tbsp oil
  • Potato finger chips, chopped coriander leaves for garnish


Clean and joint the chicken. Blanch, peel and chop the tomatoes. Grind all the ingredients from red chillies to turmeric powder with vinegar and very little water to a smooth paste. Add salt. Mix with the chicken. Keep aside for 1 hour.

Add 1 cup of water and cook covered over a low flame till the chicken is tender and water is absorbed (Add more hot water while cooking if necessary). Now add the oil and cook stirring till the chicken and masala are well fried.

Add tomatoes and simmer till tomatoes are reduced to pulp and form thick gravy, which coat the chicken pieces.

Transfer to a serving dish and garnish with potato finger chips and coriander leaves. Serve hot with rice or chapathis.
