Aval Payasam

This is a tasty dessert recipe with rice flakes and jaggery, very easy to make and tasty to have it for dessert.  Add this healthy dessert in your menu and enjoy the delicious taste.

Preparation time: 10 minutes
Cooking time: 15-20 minutes
Yields: Serves 4-5 persons one cup each

Ingredients

  • Rice flakes (the thicker one will be better) 100g
  • Jaggery 100 g
  • Coconut grated 1 cup
  • Cardomom powder
  • Nuts to decorate
  • Ghee just to fry rice flakes.

Method

Heat ghee in a kadai and dry the rice flakes well.  After it cools crush it well with hand or run on blender just 1 speed for a minute or two.

Extract a cup of milk from the grated coconut by grinding it well in a mixer.

Boil a cup of water in a vessel and cook the crushed rice flakes until soft.

Dissolve jaggery in water, strain to remove any dirt and boil this on the stove.  Add boiled rice flakes into it and mix well.  Add cardomom powder, fried nuts.  Remove from fire.

When it cools add coconut milk.  After adding coconut milk do not boil the payasam directly on stove as it will curdle the whole thing and may give a sour taste.

It can be served chill or if you like it hot boil it by double boiling. (placing the dessert vessel in a boiling water in kadai).

Delicious aval payasam is ready to serve.
