Indian cheesecake is a popular traditional recipe. Curds and milk and beaten till smooth and flavored with cardamom. Cheesecakes can be flavored with seasonal fruits. It is a restrained dish and there is no added sugar. Anyone can enjoy this delectable dish!

- 3 cups curds
- 1 cup milk
- 1 cup condensed milk
- ¼ tsp cardamom powder
- A pinch of saffron dissolved in 1 tsp of warm water
- Fruits and nuts to decorate
Pour curds into a fine strainer. When some of the water is drained and curd is reduced to 1 cup, pour into a bowl and beat till smooth.
Add milk, condensed milk, cardamom and saffron. Mix well. Pour into a pudding dish. Pour enough water in a cooker to fill up to half the level of the mould.
Place the mould in the cooker over an upturned cooking plate and cover with the lid (allow steam to escape). When the water begins to boil, transfer the cooker onto a flat hot pan and keep on an extremely low flame. Switch off when the cake is set (approx 40 min) and remove the mould. Cool and chill in a refrigerator. Serve decorated with fruits and nuts.
